Here is what we ate (p.s. need to do more food related posts. Right?)
Turkey bacon avocado wraps- We changed up the recipe slightly, but this version is really good.
One pot Lasagna- which is SO much easier and almost just as tasty as the original stuff. We use whole wheat noodles and plain sausage as the meat. The rest of the ingredients are cottage cheese, pasta sauce, and a little extra cheese and garlic salt. I loved it and Declin loved it, but the other kids have decided to boycott all things tomato sauce and pasta. Say what?!
Pesto Salmon and Italian veggies in foil- Salmon is pretty much the only seafood I can stomach so I we have it quite a bit in one form or another. This one is probably second in line for the recipe that I hate the least. This one is my top choice.
Cafe Rio- Yep. SO loyal to that place. Especially since my kids eat free. Everyday.
Blueberry corn breakfast cake- Cake is misleading because this doesn't have very much sugar in it. I am a big fan of this recipe especially if you go crazy and put fresh whipped cream on it.
Can I admit that we had pizza for dinner Saturday night? Blah! Bad! SO bad!
Speaking of Saturday. We taught our kids a lovely lesson about disappointment. It was pretty bad and totally mine and McKay's fault. We tried to do something fun as a family Saturday night. It started with wanting to go swimming. We left the house at 5 pm and decided to grab dinner first so that hungry meltdowns didn't happen while we were trying to have "fun". Well a quick pizza at the park was not the best choice since by the time we headed to the gym for our family night of swimming we learned that the kids pool would close in 30 mins. 1st fail. Then we headed to the 2nd and final swimming pool in town. Also closed. 2nd fail. Then mom opened her big mouth and suggested that we just go buy a cheap swimming pool at the store and let the kids "swim" at home. Our kids are easily impressed so this idea sounded awesome to them. Guys, you can't find mini pools at the store in August. We checked several stores. 3rd fail. So we gave up, got some free slushies and came home empty handed and let the kids run through the sprinklers as the sun was setting. We are the best parents ever.
The rest of the week we just survived with out McKay being home. Between and new calling (ward clerk) and round the clock overtime at work we only saw him on Monday night and Saturday. I know there is a time and season for everything in life and I am adjusting to being a "single" mom of sorts for a little while. This is a new role for me as McKay is normally home 4 out of the 5 evenings. So spoiled I know.
To help with the adjustment of the single mom life I have one of these in my amazon cart waiting patiently for me to buy it tomorrow. Desperate times call for desperate measures and after almost breaking two of Jensen's toes at the grocery store on Thursday (I rolled over them with the cart) I decided I better play things safe (safer). So the boys will both be riding in the cart from now on. For the last few months I had been grocery shopping at night without kids, but that isn't working out as well so we are back to hauling the crew. But honestly the hardest thing about not having McKay home is I just get SO dang lonely. Love my kids, but I love adult conversation too. These are the days I need my mom and sisters around the corner so that I can just go and talk their ears off. But since that is not the case you guys get to listen to me here. :)

Other things that are helping pass the time are getting an early start on Christmas shopping and a nightly ritual of a few episodes of "Once Upon a Time" (it is a TV series that is on Netflix if you didn't know). Totally promised that we would never get hooked on watching TV every night. But for the last 2 months we have been. Luckily I don't think it will be a regular thing since McKay is MEGA picky when it comes to what he will watch (rightfully so). That leaves very few shows for us to watch together. We are almost done with season 4 and then we will have to watch them the old fashion way (aka. wait for each new episode to come out each week).
Christmas shopping is too fun. I love kids toys and trying to find something fun for each child. I haven't actually bought anything, just shopping around and organizing my ideas. So far I have 100 ideas for Jensen and only 1 idea for Addie. But I am SURE Addie will let me know what she wants as it gets closer.
Oh and my new obsession is Ebay. We have a very strong love/hate relationship. I had sworn it off forever a couple months ago but after deciding that kids shoes are SO expensive especially for the nice durable kind I decided to lift my vow to avoid it and have now found some good deals for the whole family. I haven't gone overboard yet (luckily) but got a few essentials that we were already in need of (Jensen is happy to have shoes now). Ebay... I love you. For now.
She LOVES this dress and I really don't. I try and hide it, but she always finds it. I guess some battles are just not worth it.

And a few more "highlights" from our week
-Preschool went well this week and 4 years old is a fun age to teach.
-Declin is SO smart. He will be 11 months old tomorrow, and he is fun to watch. He dances now, says a few words, and will actually "play" with toys the way they are meant to be played with. Such as push a car along the ground or throw a ball. Oh and as the 3rd child know how to hit, scream, and pull hair. Usually the recipient deserves it. Except when it is my hair. Long hair is so fun with a baby.
-I attempted to potty train Jensen. He is so happy go lucky and doesn't have a clue about what he is doing. He gets the whole #2 business, but hasn't figured out #1. Bless him, but he may be in diapers for a few more months.
Last week was interesting, but life is good.
